Casizolu is an ancient cow's milk cheese with a stretched curd, white and compact. Similar to a large scamorza, Casizolu is shaped by hand, so as to give it the typical pear shape. Its rind is perfectly smooth and yellow, straw or brown in color, changing with the seasoning.
